Also, it gives you some flexibility. For example, you can shoot one project for three days, pop a different card in for a second project, then return to the original footage and keep going, with no chance of having the two sets of clips all jumbled up together. Also, if I am shooting for a client, I can bill them for the cost of the card, or have them provide it, and then send them off with their raw clips once the project is done (and I've been paid). This way I can edit for them, or they can edit on their own time - but it makes it easier for them to "own" the footage.
